Mum’s Chocolate Frosting

  • 6 Tablespoons softened butter
  • 12 Tablespoons coco powder (Frye’s recommended)
  • 1 Pound box confectioner’s sugar
  • 1/2 cup (approx.) cooled strong coffee
  • 1 Teaspoon vanilla extract

Mix butter and cocoa until smooth.  Gradually add cooled coffee and sugar until the quantity and consistency is to your satisfaction.  Before icing, make sure the cake or cupcakes are cooled to room temperature.

Note:  You may only need about 3/4 of the sugar; adjust to taste.
